- 1/4 teaspoon asafoetida (hing)
- 10-12 dried curry leaves
- 2-3 dried red chilies (adjust to taste)
- 1 teaspoon black cardamom seeds (discard the outer husk)
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground mace
Homemade Biryani Masala Powder Recipe Ingredients Instructions:
Heat a dry, heavy-bottomed pan or skillet over medium-low heat.
Add the coriander seeds, cumin seeds, fennel seeds, black peppercorns, green cardamom pods, cinnamon stick, cloves, bay leaves, star anise, fenugreek seeds, and mustard seeds to the pan.
Dry roast these spices gently, stirring constantly, until they become aromatic and slightly change color. This should take about 2-3 minutes.
Add the turmeric powder, red chili powder, and asafoetida to the pan. Continue to roast for another 1-2 minutes until the spices release their fragrance. Be careful not to burn them, as this can make the masala bitter.
