  1. 2 tablespoons coriander seeds

  5. 1 tablespoon green cardamom pods
  6. 1 cinnamon stick (about 2 inches)
  7. 5-6 cloves
  8. 2-3 bay leaves
  9. 1 star anise
  10. 1/2 teaspoon nutmeg powder
  11. 1/2 teaspoon mace powder
  12. 1/2 teaspoon fenugreek seeds
  13. 1/2 teaspoon mustard seeds
  14. 1/2 teaspoon turmeric powder
  15. 1/2 teaspoon red chili powder (adjust to taste)
  16. 1/4 teaspoon asafoetida (hing)
  17. 10-12 dried curry leaves
  18. 2-3 dried red chilies (adjust to taste)
  19. 1 teaspoon black cardamom seeds (discard the outer husk)
  20. 1/4 teaspoon ground cloves
  21. 1/4 teaspoon ground nutmeg
  22. 1/4 teaspoon ground mace

  24. Instructions:

    1. Heat a dry, heavy-bottomed pan or skillet over medium-low heat.

    2. Add the coriander seeds, cumin seeds, fennel seeds, black peppercorns, green cardamom pods, cinnamon stick, cloves, bay leaves, star anise, fenugreek seeds, and mustard seeds to the pan.

    3. Dry roast these spices gently, stirring constantly, until they become aromatic and slightly change color. This should take about 2-3 minutes.

    4. Add the turmeric powder, red chili powder, and asafoetida to the pan. Continue to roast for another 1-2 minutes until the spices release their fragrance. Be careful not to burn them, as this can make the masala bitter.

    5. Remove the roasted spices from the pan and let them cool completely.

    6. Once the spices are cool, transfer them to a spice grinder or mortar and pestle. Add the dried curry leaves, dried red chilies, black cardamom seeds, ground cloves, ground nutmeg, and ground mace to the mix.

    7. Grind the spices into a fine powder. You now have your homemade biryani masala ready!

    8. Store the biryani masala in an airtight container in a cool, dry place. It will remain fresh and flavorful for several months.


    9. Freezing (optional): If you intend to store biryani masala for an extended period, you can freeze it in an airtight container. Make sure the container is freezer-safe and leave some headspace for expansion. When needed, allow it to come to room temperature before using.
