Ingredients:
To marinate:
700g boneless chicken (cut into pieces)
1 cup sour yogurt
1 tablespoon ginger-garlic paste (made by mixing equal parts of ginger and garlic)
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
2 tablespoons of oil
Salt to taste

For the gravy:
4 tablespoons of butter
2 tablespoons of oil
1 large onion (chopped)
2 teaspoons ginger-garlic paste
1 can (14 ounces) tomato puree
1 tsp red chili powder (as per your preference)
Chopped coriander leaves 1 tsp
1 teaspoon cumin seeds
1/2 teaspoon garam masala
1/2 teaspoon dried fenugreek leaves (kasuri methi)
1/2 cup heavy cream
1 teaspoon sugar (as per taste)
2 tbsp cashew paste (ground to a smooth paste)
1 teaspoon paprika (for color)
Chop fresh coriander leaves for garnish

Instructions:
Marinate the chicken:
Mix curd, oil, ginger-garlic paste, red chilli powder, turmeric powder, garam masala and salt in a bowl.
Add the chicken pieces and mix well so that all the spices coat the meat well. Cover or refrigerate at least 2 hours or the night before for best results.
Cook Marinated Chicken:
Preheat your oven to 350°F (175°C). Place the marinated chicken on a baking sheet and bake for about 20-25 minutes or until it is cooked through. You can grill or pan-fry the chicken (to impart a smoky flavor) until it is slightly charred.
Prepare the gravy:
Heat butter and oil in a large skillet or pan over medium heat.
Add the chopped onion and fry until it becomes translucent and light brown, which takes about 5-7 minutes.
Add spices:
Stir in the ginger-garlic paste and cook for another 1-2 minutes until the raw smell goes away.
Add red chilli powder, chopped coriander leaves, cumin, garam masala, sugar, cashew paste, paprika, dry fenugreek leaves and salt. Cook for 2-3 minutes, stirring frequently.
Add tomato puree:
Pour in the tomato puree and cook for about 10-15 minutes, or until the oil starts to separate. This indicates that it is well cooked.
Blend:
Allow it to cool slightly, then transfer it to a blender to make the gravy, and grind to a smooth paste.
Finish cooking:
Pour the mixed gravy into a pan and keep it on low heat.
Stir in heavy cream and cooked chicken pieces. Simmer for about 10 minutes, allowing the flavors to meld and the gravy to thicken.
Serving:
Garnish with fresh coriander leaves.
